If you’re family is like mine you always have left over Thanksgiving turkey.  You can only have so many Thanksgiving like dinners before you get tired of it.  My threshold is about 2 dinners, then I’m looking for other things.  Here are some recipes that I like to use to use up my left over turkey.

Grilled Turkey and Cheese Sandwiches and Tomato and Basil Soup

It’s just like making your typical grilled cheese but throw some of the turkey in between the bread.  I like to sprinkle a little garlic salt on the butter before grilling it.  Heat up some tomato and basil soup to accompany it and you’ll have a tasty meal that won’t feel like you’re eating turkey.

Turkey Enchiladas

I have a great chicken verde enchilada recipe that I wrote about a while back.  Substitute turkey for chicken and you’ll have a super delicious meal that your family will devour!  This is also a great dish to eat while watching football.

Turkey Tacos

Grill up some tortillas, grab your favorite taco toppings, warn up your turkey and you have a quick, tasty meal to use your left over turkey in .

BBQ Turkey Sandwiches or Sliders

Go buy some a fresh french baguette or a sourdough baguette and slice it into thirds or quarters.  Then split them down the middle.  Stuff the baguette with turkey, cheese, bbq sauce and any other toppings that you like.  If you really want to get fancy, toast the bread in the oven or in a pan.  Or you can wrap the sandwich in foil bake it.  If you have left over rolls, just use those and make slider versions.

Turkey Fried Rice

I make great Benihana style fried rice with chicken that I also wrote about in a previous post.  Take this delicious recipe and substitute the chicken with turkey.

Turkey Quesadillas

We all know how to make a quesadilla.  Just throw in some shredded turkey, salsa, guacamole, sour cream and you’re good to go!

Turkey Cobb Salad

This is a super easy salad to make.  Shred or chop your turkey, toss it in with some lettuce, cheese, hard boiled eggs, bacon bits, tomatoes and your favorite dressing.  Mix it all up in a salad bowl and you no have a healthier turkey meal.
